Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clarified dripping or butter
Carries the heat and adds rich fat flavour for frying the onion and meat.
Onion
Browns to add sweetness and savoury depth to the sauce.
Curry powder
Provides the main spice aroma and flavour of the dish.
Flour
Thickens the cooking liquid into a smoother, heavier sauce.
Apple
Adds mild sweetness and body as it softens into the sauce.

The step that matters

Brown the onion carefully. Onion browns through the Maillard reaction, building sweet, savoury flavour. Too much heat scorches the sugars, leaving bitter, burnt notes that spoil the whole curry.

Swap the apple

How well each one fits the dish's main ingredients (butter, onion, flour):

  1. Avocadofits better
  2. Raisinfits better
  3. Coconutfits better
  4. Applethe original

Fit is the average pairing score against butter, onion, flour. Candidates are from the same food group and used in at least 100 recipes.
