Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Veal and Ham Pie
Ingredients
Directions
On a clean surface, combine ¾ lb flour, 3 oz butter, and 2 oz lard.
Chop the butter and lard into the flour, sprinkle with ¼ teaspoon salt, and make a well in the center.
Add 1 tablespoon of water and mix lightly with a knife.
Knead with your fingers, adding more water if necessary, until a stiff paste forms.
Keep your hands and the surface floured to prevent sticking.
Flour a rolling pin and roll out the paste, folding it in half and turning it four times, rolling it to fit the pie dish.
Boil water in a small saucepan, add 2 eggs, and cook for 10 minutes.
Cut 1½ lb veal and ¼ lb bacon into small pieces.
Once the eggs are boiled, cool them, tap to crack the shells, and peel.

Swap the parsley
How well each one fits the dish's main ingredients (veal, pepper, flour, butter, egg):
- Parsleythe original
- Nutmegfits about as well
- Sagefits less well
- Capersfits less well
Fit is the average pairing score against veal, pepper, flour, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
