Fish Baked

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Heat a frying pan over medium heat and add drippings or butter.

  2. Stir until they begin to brown, then add enough boiling water to moisten.

  3. Season the stuffing with salt, pepper, and either celery seed, sage, or chopped onion.

  4. Stuff the fish with the mixture and sew up the opening or tie it with string.

  5. Lay strips of salt pork or bacon in the pan and on top of the fish.

  6. Sprinkle with a little water, pepper, salt, and bread crumbs or dredge with flour.

  7. Bake in a hot oven at 400°F (200°C), basting frequently.

  8. The fish is done when flakes begin to separate.
