What each ingredient does

Carolina rice
Swells as it cooks in milk, thickening the base and giving the mold its body.
Milk
Cooks with the rice to give a soft, creamy texture and moisture to the mold.
Eggs
Set during steaming, binding the rice mixture into a firm, sliceable mold.
Butter
Adds richness and a smooth, fat-based mouthfeel to the mixture.

The step that matters

Filling the mould only partially. Rice and egg mixtures expand and rise as they steam, so overfilling can cause the mold to overflow or cook unevenly.
