Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hind leg of beef
Provides the meat and collagen that give the broth body and richness as it simmers.
Onions
Contribute sweetness and savory depth to the broth as they soften and release their flavor.
Carrots
Add natural sweetness and aroma to the broth during long simmering.
Celery
Adds savory, aromatic flavor to the broth during long simmering.
Anchovies
Add concentrated savory depth, or umami, that is hard to detect as fish.

The step that matters

Simmer gently over low heat. A slow, gentle simmer extracts flavor and collagen from the beef and bones while keeping the broth clear. A hard boil emulsifies fat into the liquid and makes it cloudy and greasy.

Swap the clove

How well each one fits the dish's main ingredients (beef, carrot, onion, celery, ham, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against beef, carrot, onion, celery, ham, pepper. Candidates are from the same food group and used in at least 100 recipes.
