Mutton and Lamb

Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cook the mutton until tender.

  2. Remove it from the stew-pan and drain.

  3. Place the mutton on a dish.

  4. Pour high-seasoned gravy or skimmed gravy over the mutton.

  5. Sprinkle with bread crumbs.

  6. Mix 3 egg yolks with oiled butter and spread over the mutton.

  7. Sprinkle more bread crumbs on top.

  8. Bake in a brisk oven at 400°F (200°C) while basting with oiled butter until browned.

  9. Serve with strained and reduced gravy.
