Ingredients

Directions

Prepare

  1. Truss the turkey as if for roasting.

  2. Stuff the crop with veal stuffing and fill the body with chestnuts, liver, gizzard, and heart.

  3. If not boiling in a napkin, tie the turkey with broad tape for lifting.

Boil and serve

  1. Place the turkey in a pot with plenty of cold water.

  2. Skim while boiling.

  3. Once boiling, reduce to a simmer until done, about 1 to 4 hours depending on size and age.

  4. If serving with celery sauce, cook celery with the turkey.

  5. When tender, serve garnished with parsley and scraped horseradish.

  6. Serve with oyster sauce, bread sauce, or onion sauce.

What each ingredient does

Turkey
Is the main cooked meat; simmering in water cooks it gently and keeps it moist.
Chestnuts
Add starchy, sweet body and soft texture to the stuffing filling inside the bird.
Liver
Adds richness and a deeper, savoury flavour to the filling.
Veal stuffing
Fills the crop and adds savoury body and moisture to the bird.

The step that matters

Skim while boiling. Foam and impurities rise to the surface as the water heats; removing them keeps the broth clear and the flavour clean. Keeping the liquid at a gentle simmer rather than a hard boil keeps the meat tender instead of tough and stringy.

Swap the horseradish

How well each one fits the dish's main ingredients (turkey, veal, chestnut, liver, parsley, oyster, sauce):
