Why it works: Turkey and chestnut work together. They rank in the top 10% of all ingredient pairs, and cooks put them together in 136 recipes. Both carry decanal, which smells soap, orange peel. The science ↓
Economically Truffled Turkey
Ingredients
Directions
Prepare the truffles
Select large truffles with few irregularities and ensure they are not mouldy.
Wash the truffles thoroughly with a soft brush to remove all dirt and grit, then let them drain and dry.
Slice the truffles as thinly as possible without peeling them.
Stuff and roast
Skin and boil a good quantity of chestnuts as you would for ordinary roast turkey.
Mix the sliced truffles with the chestnuts and fill the body of the turkey with this mixture two to three days before cooking.
On the day of cooking, fill the crop of the turkey with veal stuffing and roast as usual.
Serve the turkey with its own gravy in a hot sauceboat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Truffles
- Provide the dish's distinctive earthy, aromatic flavour, which the turkey absorbs during resting.
- Chestnuts
- Add starchy, mildly sweet bulk that soaks up the truffle aroma and keeps the filling moist.
- Veal stuffing
- Fills the crop and adds savoury body and moisture to the bird as it roasts.
The step that matters
Filling the body two to three days ahead. Truffle aroma is volatile and the flavour must migrate from the filling into the surrounding meat over time. Packing the cavity early lets that happen, but the truffles must be clean and dry first, because any moisture or grit can spoil them before cooking.
Swap the chestnut
How well each one fits the dish's main ingredients (turkey, truffle, veal):
- Chestnutthe original
- Peasfits about as well
- Pistachiofits less well
- Walnutfits less well
Fit is the average pairing score against turkey, truffle, veal. Candidates are from the same food group and used in at least 100 recipes.
