Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crayfish
Provides the main flavour and meat that gives the soup its body and taste.
Boiled rice
Thickens the soup and adds body as it breaks down into the liquid.
Tomato puree
Adds acidity, colour and a deeper savoury flavour to the soup.
Butter
Adds richness and a smooth, rounded mouthfeel to the finished soup.
White wine
Adds acidity and aroma while the crayfish cook.

The step that matters

Stir without boiling. Once the butter is added, boiling can cause the fat to separate and make the soup look greasy and broken. Gentle heat keeps the emulsion smooth and the flavour fresh.

Swap the tomato

How well each one fits the dish's main ingredients (crayfish, white wine, parsley, rice, pepper, butter):

  1. Shallotfits better
  2. Carrotfits better
  3. Potatofits about as well
  4. Tomatothe original

Fit is the average pairing score against crayfish, white wine, parsley, rice, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
