Timbales

Ingredients

Directions

  1. Cook rice until nearly absorbed, then reduce heat and finish boiling until thick.

  2. Remove from heat and stir in butter, parmesan, and nutmeg.

  3. Pour into a buttered sauté pan to form a 2-inch thick layer, smooth the surface, and cool for 2-3 hours.

  4. Use a round cutter to cut out 12 timbales from the rice, then breadcrumb them twice.

  5. Set them upright and cut the top with a smaller cutter.

  6. Fry in hot cooking fat until golden, then drain.

  7. Remove the cover with a knife, leaving a 1/6 inch thickness at the bottom and sides.

  8. Fill with partridge puree and top with a slice of cooked truffle.

  9. Glaze and serve on a folded napkin.
