Mogador-fritters

Ingredients

Directions

  1. Soak the beef marrow and boil it in unskimmed broth for 2 minutes.

  2. After 15 minutes, drain the marrow and cut it into thick slices.

  3. Season the slices with coarse sea salt and cayenne pepper.

  4. Dip each slice into a mixture of brown sauce, wine, and glaze.

  5. Place the slices on chopped truffles to mask them completely.

  6. Arrange on a baking sheet and keep on ice until serving.

  7. Dip the rounds of marrow into batter and fry in hot fat until golden.

  8. Drain the fritters and serve hot.
