Why it works: Roe and sauce work together. They rank in the top 10% of all ingredient pairs, and cooks put them together in 142 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Soft-roes, ‘a LA Villeroi’

Ingredients

Directions

  1. Soak the live soft-roes of carp in acidulated water.

  2. Boil them briefly in the water to firm them up, then drain.

  3. In a sauté pan, season the soft-roes and add cooked fine herbs thickened with melted glaze.

  4. Let the mixture cool, then take each soft-roe, dip it in Villeroi sauce, and place on a baking sheet to firm up.

  5. Once firm, roll each soft-roe in bread crumbs, then dip in beaten eggs, and coat again with bread crumbs.

  6. Heat plenty of hot fat in a pan and fry the soft-roes until they are a nice color.

  7. Drain on a cloth and serve in a group on a napkin.
