What each ingredient does

Eggs
Set when cooked, giving the omelet its structure and body.
Crayfish tails
Provide the main filling and its savory, shellfish flavor.
Mushrooms
Add moisture and earthy flavor to the filling.
Butter
Fats the pan so the omelet cooks gently and releases easily, adding richness.
White sauce
Adds creaminess and moisture to the filling.

The step that matters

Cook the egg mixture until it just begins to thicken. Eggs turn firm and rubbery when overcooked, so removing the omelet while still slightly moist keeps it tender and lets it roll without tearing.

Swap the parsley
