Household Black-puddings

Ingredients

Directions

  1. Mix the warm blood with ¼ cup of vinegar gradually while stirring.

  2. Add a few blades of thyme to the blood mixture.

  3. If using fresh guts, cleanse and soak them in a basin with a handful of coarse sea salt for 2 hours; if dry, soften in cold water.

  4. Cut onions into quarters and boil in salted water for 7-8 minutes, then drain.

  5. Cut the pork fat into small dice and warm in a stewpan with the onions for 20 minutes, then remove from heat.

  6. Pass the blood through a sieve into a stewpan and warm it on low heat while stirring continuously.

  7. When the blood is tepid, mix in the onion and pork fat, season, and add a little rum.
