Turkey, with Celery-sauce

Ingredients

Directions

  1. Draw the turkey and fill its breast with bread-crumb stuffing or minced meat.

  2. Truss the turkey securely, adjusting its paws as needed.

  3. Place the turkey in a braising pan and spread with raw fat trimmings and minced vegetables.

  4. Moisten the turkey to half its height with white stock or broth and a little white wine.

  5. Bring the liquid to a boil, then reduce the heat to a slow simmer.

  6. Baste the turkey occasionally to monitor its cooking progress.

  7. At serving time, drain the turkey on a baking sheet, untruss it, and serve with celery sauce.
