Stuffed and Roast Turkey, with Bread-sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the turkey

  1. Truss the turkey and wipe its inside.

  2. Stuff the breast with bread or meat stuffing.

Roast

  1. Wrap the turkey in buttered paper and roast it in the oven at 400°F (200°C) for 1¼ to 2 hours, basting with its own fat.

  2. Unwrap the turkey when three‑quarters done and salt it after removing from the oven.

Make the bread sauce

  1. For the bread sauce, boil white bread crumbs in milk with onion or shallot, salt, and pepper until consistent.

  2. Finish the sauce with a piece of butter.

Serve

  1. Untruss, dish it, and serve with a boatful of bread sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main roasted meat, which is cooked whole and wrapped to keep it moist.
White bread crumbs
Thicken the milk into a smooth, spoonable sauce as they soften and swell.
Milk
Softens the bread and forms the liquid base of the sauce.
Butter
Adds richness and a glossy finish to the bread sauce and basting fat for the turkey.

The step that matters

Unwrapping and salting the turkey. Unwrapping near the end lets the skin brown, while salting after roasting keeps the seasoning on the surface rather than drawing moisture out during cooking.

Swap the onion
