Ingredients

Directions

  1. Singe and draw the pigeons, removing their feet, necks, and pinions.

  2. Cut each pigeon into three pieces and place them in a stewpan with the pinions and chopped bacon.

  3. Fry the mixture until browned, then season with pepper and salt.

  4. Add the raw ham, parsley, chopped onion, and halved mushrooms; let it cook for a few minutes.

  5. Moisten with white wine and allow the liquid to reduce, then remove from heat and let cool.

  6. Prepare the pie as directed for hot lark-pie.

  7. After baking, open the pie's top and moisten the meat with thick gravy.
