Ingredients

Directions

Prepare the meat and onions

  1. Cut the meat into neat pieces and soak in vinegar for a few minutes to soften the fibers.

  2. Fry the onions until brown, then drain them from the fat and add to a stewpan with the meat.

Simmer

  1. Add the boiling water, cover closely, and simmer gently for about 4 hours. Stir occasionally while cooking.

  2. Prepare the other vegetables by cutting them into small squares and add them about 1 hour before the stew is finished.

Thicken and serve

  1. Just before serving, mix the flour with a little cold water to make a smooth paste, then add it to the stew.

  2. Stir until it boils, season to taste, and serve on a hot dish.

What each ingredient does

Leg of beef
Provides the main protein, which becomes tender during long gentle simmering.
Vinegar
Acidity that helps soften the meat fibers before cooking.
Onions
Browning and sweetness from frying, adding depth of flavor to the stew.
Flour
Thickens the cooking liquid into a smooth, lightly bodied gravy.
Carrots
Adds sweetness and body as they soften in the stew.
Turnip
Adds mild sweetness and texture as it cooks in the stew.

The step that matters

Mixing the flour paste. Flour added directly to hot liquid forms lumps, so it must first be whisked smooth with cold water. Stirring until it boils then cooks out the raw starch taste and thickens the gravy.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, turnip, flour, vinegar, pepper):

  1. Parsnipfits better
  2. Leekfits better
  3. Beetrootfits better
