Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cut the meat into small pieces.

  2. Mix salt and pepper on a plate.

  3. Dip the meat in the salt and pepper mixture.

  4. Place the meat in a pie dish.

  5. Fill the dish halfway with boiling water to seal the pores.

  6. Wait until steam escapes.

Make the pie crust

  1. Wet the edges of the dish.

  2. Line the edges with narrow strips of pastry.

  3. Wet the pastry strips.

  4. Cover the pastry strips with more pastry.

  5. Press down lightly.

  6. Trim the edges neatly.

  7. Crimp the edges with the back of a knife.

  8. Make a hole in the center for steam to escape.

  9. Decorate as desired.

Bake

  1. Bake in a hot oven at 400°F (200°C) for about 20 minutes.

  2. Reduce the oven temperature to 350°F (175°C).

  3. Cook for about 1 hour until the meat is tender.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Beef and flour barely smell alike, yet cooks put them together in 10,677 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef skirt or steak
Provides the main meat, which becomes tender through long, slow cooking.
Bullock's kidney
Adds a richer, more intense meaty flavor to the filling.
Flour
Helps thicken the juices around the meat as the pie cooks.
Short or flaky pastry
Forms the crust that encloses the filling and browns in the oven.

The step that matters

Wait until steam escapes before sealing the pie. Boiling water poured into the dish must cool slightly before the pastry goes on; sealing too early can trap steam and make the crust soggy or lift it from the edges.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
