Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Wash, dry, and cut the fish into nice pieces.

  2. Stew the fish in a little cold water and salt to make gravy.

Assemble and bake

  1. Layer the fish in a pie dish, sprinkling each layer with salt, pepper, parsley, and browned crumbs.

  2. Pour the gravy over the fish and let it cool.

  3. Cover with pastry and bake in a hot oven (400°F / 200°C) for about 30 minutes.

Browned bread crumbs
Add a toasted, savoury flavor and a slightly crisp texture between the layers.
Short or flaky pastry
Forms the crust that seals the pie and browns in the oven.
