  4. Place the yolk round in the center and arrange the white pieces around it.

  5. Set the decoration with a little more aspic jelly.

Layer and set

  1. Pour in a ¼ inch thick layer of aspic jelly.

  2. Add a layer of sliced foie gras or ham and chicken cream mixed with thick cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clear aspic jelly
Forms the clear, firm set that holds the layers and decoration together.
Foie gras or ham and chicken cream
Provides the rich, savoury filling that forms the main body of each layer.
Thick cream
Adds richness and a smoother, softer texture to the filling.
1 hard-boiled egg
Supplies the yolk and white pieces used as the decorative centre and contrast.

The step that matters

Set the decoration with a little more aspic jelly. Aspic must be cool and nearly set before the next layer goes in, so the decoration stays in place and the layers do not blur together. Pouring hot or runny aspic can shift the egg pieces or mix the layers.

Swap the lettuce

How well each one fits the dish's main ingredients (egg, ham, cream):

  1. Asparagusfits better
  2. Leekfits better
  3. Spinachfits better
  4. Lettucethe original

Fit is the average pairing score against egg, ham, cream. Candidates are from the same food group and used in at least 100 recipes.
