Ingredients

Directions

Cook the macaroni

  1. Break the macaroni into short lengths and place it in a saucepan with enough boiling water to cover it, slightly salted.

  2. Boil slowly for 20 minutes, then drain and return to the saucepan with the milk.

  3. Cook until tender but not broken, about 20 to 30 minutes.

Season and bake

  1. Mix half of the grated cheese with the macaroni, along with a little salt, cayenne pepper, and mustard.

  2. Transfer to a flat dish, sprinkle with the remaining cheese and grated bread, and dot with butter.

  3. Place under the broiler to brown the top, then serve hot.

What each ingredient does

Macaroni
Forms the bulk of the dish and gives the body that holds the sauce.
Milk
Cooks into the sauce, adding moisture and creaminess to the macaroni.
Cheese
Melts into the sauce for rich flavor and a stretchy, creamy texture.
Grated bread
Sprinkled on top, it crisps and browns under the broiler for a crunchy crust.
Butter
Adds fat and richness and helps the top brown evenly.
Mustard
Adds a sharp, savory note that balances the richness of the cheese.

The step that matters

Cook until tender but not broken. Overcooked pasta turns soft and mushy and loses its bite, while undercooked pasta stays firm and chalky. Checking texture during the final minutes keeps the macaroni intact through baking.

Swap the mustard
