The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide pectin and tart flavor that help the juice set into a jelly.
Rhubarb
Adds acidity and tartness that brightens the flavor of the jelly.
Sugar
Sweetens the jelly and helps it set by binding water and firming the gel.

The step that matters

Let the juice drain without pressure. Squeezing the jelly bag pushes cloudy solids through, which makes the jelly cloudy. Gentle draining keeps the juice clear.

Swap the rhubarb

How well each one fits the dish's main ingredients (apple, sugar):

  1. Cinnamonfits better
  2. Rhubarbthe original
  3. Gingerfits about as well
  4. Clovefits about as well

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
