Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Provides the liquid base and dairy richness for the ice cream.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer.
Eggs
Add richness and help emulsify the mixture for a smooth texture.
Gelatine
Stabilises the mixture and helps it hold a smooth, less icy texture.
Vanilla extract
Adds the main aroma and flavour.

The step that matters

Dissolving the gelatine. Gelatine must be fully dissolved and mixed evenly into the cooled base; undissolved pieces leave a rubbery texture and uneven set in the frozen ice cream.
