What each ingredient does

Sausage meat
Adds fat and savory meaty flavor that carries through the stuffing.
Cooked chestnuts
Provide starchy body and a sweet, nutty flavor to the stuffing.
Mushrooms
Add moisture and earthy savory depth as they cook down.
Bread crumbs
Absorb liquid and fat, giving the stuffing a soft, cohesive texture.

The step that matters

Mix gently once the whole chestnuts go in. Whole chestnuts are fragile and break easily under vigorous stirring. Gentle folding keeps them intact so they stay whole in the finished stuffing.
