What each ingredient does
- Potatoes
- Provide the starchy body that softens during frying and becomes crisp on the surface.
- Clarified beef suet or fat
- Conducts heat evenly and fries the potato surface, adding browning and rich flavor.
The step that matters
Returning the potatoes to the boiling fat. Raising the fat to boiling before the potatoes go back in lets the surface dry and crisp quickly. If the fat is not hot enough, the slices absorb grease and turn soggy instead of golden.
