Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Compressed yeast
Ferments the batter, producing gas that makes the pancakes rise and gives a slightly tangy flavor.
Buckwheat flour
Provides the main body and earthy flavor, though without gluten it gives a more delicate, crumbly structure.

The step that matters

Resting the batter for 4 hours. The yeast needs this time to ferment and build gas bubbles. Skipping or shortening the rest leaves the batter flat and the pancakes dense.

Swap the buckwheat

How well each one fits the dish's main ingredients (flour, pork):

  1. Jalapenofits better
  2. Buckwheatthe original
  3. Marjoramfits less well
  4. Turmericfits less well

Fit is the average pairing score against flour, pork. Candidates are from the same food group and used in at least 100 recipes.
