Veal Cutlets

Ingredients

Directions

  1. Fry the veal cutlets in butter or good drippings for about fifteen minutes, turning them halfway through.

  2. In a separate saucepan, melt some butter with a little soft water, adding the trimmings from the cutlets.

  3. Stir in flour gradually until mixed, then add more water to create gravy.

  4. Strain the gravy through a fine sieve and return it to the pan.

  5. Add Browning, Mushroom, Walnut sauce, or Lemon pickle to taste.
