Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Scalloped Oysters

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the oysters

  1. Stew the oysters slowly in their own liquor for 2-3 minutes.

  2. Remove the oysters with a spoon, remove the gills, and skim the liquor.

Make the crumbs

  1. Melt the butter in a stew pan, then add enough bread crumbs to absorb the butter.

  2. Add the oyster liquor to the bread crumbs and bring to a boil.

Assemble and bake

  1. Butter scallop shells and layer them with oysters and bread crumbs, alternating layers.

  2. Moisten the layers with oyster liquor and cover with more bread crumbs.

  3. Dot the top with small bits of butter and brown in a Dutch oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender, briny filling that the crumbs surround.
Butter
Coats the bread crumbs and adds richness, and helps the top brown.
Bread crumbs
Form the body of the dish and soak up the liquor and butter.
Oyster liquor
Moistens the crumbs and carries the oyster flavor through the layers.

The step that matters

Brown in a Dutch oven. The top needs enough dry heat to brown the buttered crumbs, while the layers below stay moist. Too little heat leaves it pale and soggy; too much dries the oysters and makes them tough.
