What each ingredient does

Lamb's head
Provides the main meat and rich gelatin that gives the stew body during slow simmering.
Lamb lights
Adds soft, tender offal texture and deepens the savory flavor of the broth.
Beef stock
Forms the liquid base, carrying flavor and helping extract collagen from the meats.
Shin of beef
Contributes connective tissue that breaks down into gelatin, enriching the broth's body.
Spinach
Adds leafy vegetable texture and freshness, wilting quickly in the hot broth.

The step that matters

Boil slowly for 1 hour. A gentle simmer breaks down collagen into gelatin slowly and keeps meat tender. A hard boil toughens proteins and makes the broth cloudy and greasy.
