Pease Soup

Why it works: Beef and onion are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,092 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Pease Soup

Ingredients

Directions

  1. Prepare the peas as for Pease Pudding, adding the onion and celery when rubbing the peas through a sieve.

  2. Instead of eggs and butter, add some of the liquor from the pot to achieve the desired thickness.

  3. Boil the mixture for five minutes until ready to serve.

  4. For a meatless version, incorporate the drippings and oatmeal into the soup.
