Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox-cheek
Supplies the meat and gelatinous body that enriches the broth as it simmers.
Onions
Add sweetness and savoury depth to the broth as they cook down.
Carrots
Contribute natural sweetness and body to the broth.
Celery
Adds a fresh, aromatic background flavour to the broth.

The step that matters

Skimming the scum after the boil. Scum is coagulated protein and impurities that rise when the liquid first boils. Skimming it removes cloudiness and off-flavours, leaving a clearer, cleaner broth.
