Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Slow browning builds sweetness and deep, savory flavor that forms the gravy's base.
Butter
Fat that carries flavor and helps the onions brown gently without burning.
All-purpose flour
Starch that thickens the broth into a smooth, coating gravy.
Claret or port wine
Adds acidity and fruity depth that rounds out the savory onion flavor.
Mushroom ketchup
Adds concentrated savory, umami flavor to deepen the gravy.

The step that matters

Cook the onions until lightly browned. Browning caramelizes the onion sugars and develops rich flavor. Pale, undercooked onions leave the gravy tasting flat, while over-darkened ones turn it bitter.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (butter, flour, pepper, port wine, mushroom, ketchup, lemon):
