What each ingredient does

Tarragon
Provides the main aromatic flavour that defines the vinegar.
Savory
Adds a peppery, herbal aroma that carries into the vinegar.
Chives
Contributes a mild onion-like aroma and fresh flavour.
Shallots
Adds a gentle savoury, allium sweetness to the infusion.
Vinegar
Acts as the solvent that extracts flavour compounds from the herbs.

The step that matters

Cork the bottle tightly before the sun infusion. A tight seal keeps the vinegar from evaporating and stops air and contaminants from spoiling the mixture during the two weeks of standing.
