What each ingredient does

Anchovies
Dissolve into the vinegar during steeping, adding savory depth and a salty, umami background.
Walnut ketchup
Adds deep, savory, slightly sweet fermented flavor that rounds out the sharp vinegar.
Vinegar
Acts as the solvent and preservative, extracting and carrying flavors from the other ingredients.
Cayenne pepper
Provides the heat that builds in the vinegar as it steeps.
Soy sauce
Contributes salty, savory umami that complements the anchovies.

The step that matters

Steeping for 1 month with frequent shaking. Steeping gives the vinegar time to extract flavor from the solids. Frequent shaking keeps the ingredients in contact with the liquid, so flavor spreads evenly rather than staying concentrated at the bottom.
