A Good Scotch Haggis

Ingredients

Directions

Prepare

  1. Clean the haggis bag thoroughly.

  2. Parboil the draught and boil the liver until well cooked and easy to grate.

  3. Dry the meal in front of the fire.

  4. Make about 1 quart of good stock using scraps of beef and the water from boiling the draught.

Make the filling

  1. Mince the draught and a large piece of beef finely.

  2. Grate half of the liver and mince the suet and onions.

  3. Mix all ingredients well with a handful or two of dried meal.

  4. Season the mixture with salt and mixed spices.

Fill and boil

  1. Fill the haggis bag with the meat mixture and stock, then sew it up tightly, ensuring to remove all air.

  2. If the bag is thin, wrap it in a cloth.

  3. Boil the haggis for at least two hours.

What each ingredient does

Oatmeal
Dried meal absorbs juices and binds the filling so it holds together when sliced.
Suet
Melting fat adds moisture and richness to the filling as it cooks.
Sheep's pluck
Heart, lungs and liver form the main meaty body of the filling.
Beef
Minced beef adds savoury depth and extra texture to the filling.
Onions
Minced onions add sweetness and aroma as they soften within the filling.
Beef stock
Stock keeps the filling moist and adds savoury flavour during the long boil.

The step that matters

Remove all air before sewing the bag. Trapped air can expand during boiling and cause the bag to burst, so the bag should be filled firmly and sealed tightly.
