Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Provides the main body of the stew, cooked gently in the sauce until tender.
Onion
Browning in the fat builds sweetness and savory depth into the sauce.
Flour
Thickens the cooking liquid into a smooth sauce as it is stirred into the fat.
Butter or dripping
Carries the flavor of the onion and provides fat for frying and richness.
Vinegar
Adds a sharp acidity that brightens the flavor of the sauce.

The step that matters

Stirring the flour into the hot fat. Adding flour to hot fat and stirring until smooth coats the starch in fat so it blends without lumps when liquid is added.
