Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Cold Meat Rolls

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Chop the cooked meat and onion very finely, then season with pepper and salt.

  2. Mash the potatoes smoothly, then mix in the melted butter.

  3. Heat the mixture over low heat to dry it out.

Shape the rolls

  1. On a clean surface, combine the potato mixture with enough flour to form a dough about ¼ inch thick.

  2. Cut the dough into 6‑inch squares.

  3. Place a spoonful of the meat mixture on each square.

  4. Wet the edges of the dough.

  5. Fold the dough over the filling and press the edges to seal.

  6. Place the rolls on a greased baking sheet.

Cook and serve

  1. If desired, coat the rolls in fine bread crumbs before frying.

  2. Bake at 400 °F (200 °C) until light brown, or fry in hot fat until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked potatoes
Form the dough that encloses the filling and gives the rolls their body.
Cooked meat
Provides the savoury filling that the dough wraps around.
Flour
Binds the mashed potato into a workable dough that holds its shape.
Butter
Adds richness and fat, softening the potato dough and improving its flavour.
Onion
Adds aroma and savoury sweetness to the meat filling.

The step that matters

Seal the edges firmly. Wet the edges and press them closed so the filling stays inside during baking or frying. Moisture on the dough helps the edges bond, and a weak seal lets filling leak out and burn.

Swap the onion

How well each one fits the dish's main ingredients (meat, potato, butter, flour, pepper, bread):

  1. Shallotfits better
  2. Asparagusfits better
  3. Capsicumfits about as well
  4. Onionthe original

Fit is the average pairing score against meat, potato, butter, flour, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
