Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides starch and gluten that give the fritters their structure.
Cheese
Adds rich, savory flavor and fat to the batter.
Egg white
Whipped to stiffness and folded in, it traps air that lightens the batter.
Egg yolk
Adds richness and moisture, and helps bind the batter together.
Butter
Adds fat for richness and a tender texture.

The step that matters

Frying in hot fat. Hot fat sets the outside of each spoonful quickly, so it turns golden and absorbs less oil. If the fat is too cool, the fritters soak up grease and turn heavy.
