Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Claret
Forms the wine base, supplying the main body, tannin and fruit flavour of the drink.
White sugar
Adds sweetness that balances the wine's acidity and tannin.
Lemon
Adds acidity and bright aroma from its peel oils.

The step that matters

Dissolve the sugar fully before adding the wine. Sugar dissolves much more readily in hot water than in wine. If crystals remain undissolved, they settle at the bottom and the sweetness ends up uneven across the drink.

Swap the cucumber

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Kalefits better
  4. Cucumberthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
