Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Double cream
Whipped to stiff peaks, it traps air and gives the frozen ice cream a light, rich texture.
Fresh strawberries
Provide the main flavor and, once pounded and strained, the juice that tints and sweetens the base.
Sugar
Sweetens the strawberries and helps draw out their juice when pounded together.

The step that matters

Gradually mix the whipped cream with the strawberry juice. Adding the juice slowly, in portions, keeps the whipped cream from deflating and losing the air that gives the ice cream its lightness.

Swap the strawberry

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberrythe original
  3. Raspberryfits about as well
  4. Raisinfits less well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
