Roast Plover

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pluck and truss the plover without drawing them.

  2. Cover the plover with bacon and roast at 400°F (200°C) for 20 minutes.

  3. Remove the bacon, rub the plover with butter, and dust with flour.

  4. Brown quickly in the oven.

  5. Place toasted bread underneath to absorb the drippings.

  6. Dish the plover on the bread and garnish with cresses and lemon.

  7. Serve with a rich brown gravy made with claret and lemon juice.
