Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Preheat the oven to 350°F (175°C).

  2. Line a small pie dish with short or puff pastry.

  3. Cream the butter and 4 oz. of sugar together.

  4. Add the crushed ratafias, egg yolks, and milk, and mix well.

  5. Stir in the grated rind and juice of the oranges.

  6. Pour the mixture into the pie dish.

  7. Bake for 30 minutes or until set.

Make the meringue and finish

  1. Whip the egg whites to stiff peaks.

  2. Gently fold in the remaining sugar.

  3. Spread the meringue on top of the pudding.

  4. Sprinkle with minced pistachios.

  5. Return the pudding to the oven.

  6. Bake gently for another 30 minutes.

What each ingredient does

Eggs
Yolks enrich and set the custard, while whites whip into the meringue topping.
Butter
Creamed with sugar, it adds richness and a tender crumb to the base.
Milk
Provides the liquid that the eggs set into a soft, custard-like texture.
Castor sugar
Sweetens the base and, folded into the whites, stabilises the meringue.
Crushed ratafias
Add almond-like flavour and body to the custard filling.
Oranges
Grated rind adds aroma and juice adds acidity and fresh citrus flavour.

The step that matters

Folding in the sugar and baking the meringue. Whipped whites need sugar added gradually and folded gently, or they collapse and weep. Baking gently prevents the meringue from over-browning or shrinking before it sets.
