Why it works: Carrot and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef bones
- Release gelatin and collagen, giving the stock body and a rich mouthfeel.
- Onion
- Adds savory sweetness and aromatic depth as it cooks slowly.
- Carrot
- Contributes gentle sweetness and color to the stock.
The step that matters
Remove the scum after the first boil. Impurities and coagulated proteins rise to the surface when stock first boils. Skimming them early keeps the stock clear and prevents off flavors from developing during the long simmer.
Swap the onion
How well each one fits the dish's main ingredients (beef, carrot, turnip, celery):
- Parsnipfits better
- Leekfits better
- Beetrootfits about as well
- Onionthe original
Fit is the average pairing score against beef, carrot, turnip, celery. Candidates are from the same food group and used in at least 100 recipes.
