Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Fillets of Fish and Cheese Sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Fillet the fish, wash, and dry them.

  2. Place the fillets on a baking sheet and sprinkle with lemon juice.

Bake and finish

  1. Dot with small pieces of butter, cover with buttered paper, and bake at 400°F (200°C) for 20 to 30 minutes, depending on thickness.

  2. Carefully transfer to a serving dish and pour over the cheese sauce seasoned with salt, pepper, and parsley.

  3. Sprinkle with dry cheese and brown under the grill or in front of the fire.

  4. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mullet or bream
Forms the flaky, delicate main body of the dish once baked.
Cheese sauce
Adds moisture and rich, savoury flavour over the cooked fillets.
Dry cheese
Melts and browns on top, adding a golden crust and sharper flavour.
Butter
Adds fat that keeps the fish moist and carries flavour during baking.

The step that matters

Browning the top under the grill. Fish and cheese can dry out or scorch quickly under high heat. Watching closely lets the dry cheese melt and brown without overcooking the fillets beneath.

Swap the lemon

How well each one fits the dish's main ingredients (cheese, sauce, butter, pepper):

  1. Plumfits about as well
