Why it works: Pepper and carrot match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

Prepare the sweetbreads

  1. Soak the sweetbreads in cold water, then bring to a boil and strain.

  2. Scrape and clean the sweetbreads, removing any skin.

Make the stew

  1. Melt the butter in a stewpan, then lightly flour the sweetbreads and set aside.

  2. Slice the onion and carrot, then fry them in the same pan.

  3. Stir in the flour and gravy, bringing the mixture to a boil.

  4. Add the sweetbreads to the pan and simmer gently for one hour.

Finish and serve

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Form the main body of the dish, becoming tender and delicate when gently simmered.
Gravy
Provides the liquid that becomes the sauce, carrying moisture and savory flavor.
Butter
Adds richness and fat for cooking the flour and vegetables into a smooth base.
Flour
Lightly coats the sweetbreads and thickens the gravy into a cohesive sauce.
Onion
Softens and sweetens during frying, adding aromatic depth to the gravy.
Carrot
Softens and adds gentle sweetness to the gravy as it is fried and simmered.

The step that matters

Simmer the sweetbreads gently. A gentle simmer keeps the sweetbreads tender and intact, while a hard boil can toughen the proteins and break them apart.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter, flour, carrot):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against pepper, butter, flour, carrot. Candidates are from the same food group and used in at least 100 recipes.
