Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, and helps the vegetables brown in the pan.
Onion
Browns to add sweetness and savoury depth to the sauce.
Carrot
Browns and adds natural sweetness and body to the sauce.
Stock
Forms the liquid base that gives the sauce its body and savoury flavour.
Celery
Adds aromatic flavour as it browns and softens in the sauce.

The step that matters

Frying the vegetables until browned. Browning through the Maillard reaction builds the deep colour and roasted, savoury flavour that define a brown sauce. Pale vegetables give a flat, washed-out result, so they need enough time in the butter to brown evenly without burning.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (butter, celery, carrot, onion, turnip):

  1. Lemonthe original
  2. Limeabout as good a flavor fit
  3. Avocadoabout as good a flavor fit

Fit is the average pairing score against butter, celery, carrot, onion, turnip. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
