What each ingredient does

Onions
Form the main body of the dish, becoming tender and sweet as they cook slowly.
Butter
Adds richness and helps the outside of the onions turn golden and glossy.
White stock
Provides the cooking liquid that moistens and gently flavors the onions as they simmer.
Mushrooms
Add moisture and savory depth to the parsley and shallot filling.

The step that matters

Simmer gently and turn carefully. Low heat keeps the onions cooking evenly without falling apart, and gentle turning lets them become tender and glazed while their layers stay intact.
