What each ingredient does

Lentils
Form the bulk of the dish and soften into a tender, thick stew as they simmer.
Bacon
Adds smoky, salty fat that flavours the lentils as it renders into the stew.
Pearl barley
Boiled into the cooking liquid to add body and a mild, starchy thickness.
Onion
Adds savoury sweetness and aroma as it gently cooks with the lentils.

The step that matters

Simmer until the lentils are thoroughly cooked. Lentils must be fully tender before serving; undercooked lentils stay firm and chalky. Gentle simmering softens the starches evenly without breaking the lentils apart.
