Open Jam Tarts
Ingredients
Directions
The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 400°F (200°C).
Line an open tart mold with paste about ¼ inch thick.
Make a few holes in the bottom to prevent puffing.
Bake for 10 to 15 minutes until golden.
Let the paste cool.
If serving hot, warm the jam in a clean saucepan and add it immediately.
Decorate with leaves, flowers, or stars cut from the paste and baked.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
